If you're planning to pay for dedicated server I doubt if they have three days offer, otherwise what's the problem to keep it online any longer?
Because the game is still under heavy development. There's still a massive amount of quests, hats, accessories, and abilities to put in, not to mention the combat systems, AI for the NPCs, and a ton more.

I'll make Asterian a novice scientist (as I am, and he's my ponysona). He'll have access to a number of alchemical ingredients and potion schematics. That was a really good idea, though; it would give reason as to why he would learn Thermal Control in the first place... aside combat. As to why he'd take up alchemy, well... Everypony's got to have a hobby.
As for learning self-defense, I'm leaning towards taking your second approach to it. I'm trying to get as realistic to the show as possible, and that's definitely the best approach.

You have to create him/her. The game is still in pre-alpha stages, so there's not a whole lot to choose from right now and as such it will be difficult to accurately replicate an OC, but it'll be added to as they go along.
If I stay on these forums much more, the moderators will be out of a job.
